Chicken in a Biscuit

This is a great recipe to use leftover chicken. Its so easy too!

Chicken in a Biscuit

2 cups frozen diced chicken breast, thawed (or use leftover chicken)
1 cup frozen mixed vegetables
1 (10.75-ounce) can condensed cream of chicken soup
1 2/3 cup reduced-fat milk, divided
2 cups biscuit baking mix
1/2 cup shredded Cheddar cheese

Steps
1. Preheat oven to 450°F. If using leftover chicken, tear or cut into bite-size pieces. Place chicken in large bowl.
2. Stir in vegetables, soup, and 1 cup milk; mix well. Spoon into ungreased 8-inch square baking dish.
3. Combine biscuit baking mix, remaining 2/3 cup milk, and cheese in large bowl; mix well. Drop dough by heaping tablespoonfuls into 9 biscuits, about 1 inch apart, on top of chicken mixture. Flatten dough (using back of spoon) to about 3/4-inch thick. Bake 30 minutes or until biscuits are golden and chicken mixture is thoroughly heated.

Good news & not so good news

Let's start with the good news. My student loan has been approved. I will definately be going back to school this semester. I have been waiting to hear about this so I knew for sure & now I don't have to worry. Its enough to pay for tuition, books/school supplies, and daycare.

The not so good news is I didn't do so well on the placement exam. I went up on Monday to take it & it actually put me in the lowest math class possible. Have I really forgotten that much? My SIL gave me a study guide so I can maybe test into another class, but I think I'm just gonna get the textbook for the class so next term I can test right into Math 1010 - intermed. algebra. There is just so much I have forgotten. The way I see it I will get much more accomplished if I just study from home instead of wasting time to travel up there to take one class. I live no where near campus.

Some other important news--
Nate has been sick for the past few days. At first we thought he had really bad allergies, but now its looking like a sinus infection. I hope he feels better soon! I also hope that Rem & I will stay healthy. Can you catch a sinus infection???

Bacon Sloppy Joes

Nate & I are seriously addicted to this recipe. One day we were looking for a good sloppy joe recipe and stumbled upon this one by Rachael Ray. We will NEVER have canned sloppy joes again! You are welcome to put in the onion & cloves. We just choose not to.

Bacon Sloppy Joes

4 strips of bacon, cut into 1/2-inch pieces
1 medium onion, finely chopped (we don't put in)
2 celery ribs, finely chopped
1 red bell pepper, finely chopped (any pepper works)
4 garlic cloves, finely chopped (we don't put in)
1 1/2 pounds lean ground beef
3/4 cup ketchup
1/4 cup Worcestershire sauce
Salt and freshly ground pepper
4 hamburger buns, toasted

In a large skillet, cook the bacon over medium heat for 5 minutes. Add the onion, celery, bell pepper and garlic and cook until the vegetables are softened, about 7 minutes; push to the side of the skillet. Increase the heat to high, add the ground beef and cook, stirring to break up any clumps, until cooked through, about 7 minutes. Stir in the ketchup and Worcestershire sauce and cook until thickened, about 5 minutes more. Season to taste with salt and pepper and serve on the toasted buns

Math Placement test

ARGGG! I just found out that I need to take a math placement test so I can get into Math 1010 - Intermediate Algebra. Its a class I have already taken, but its been 5 years. I'm a little nervous that I might not pass the placement test & have to take a lower Math class. Its really not a big deal, BUT Math 1010 is the lowest Math class offered online. Which means I would have to take the trip up to Ogden 2x a week to take a lower math.

If it happens I have to take a lower math, I'm hoping & praying that I can get a instructor to work with me so I only have to go to class when there is a test or maybe once a week. I was joking with Nate last night that he should dress up like a girl so he could take it for me ;) He is good at Math & I'm good at English.

I'll be taking the placement test on Monday or Tuesday so wish we luck!

Let's go fly a kite...

On Tuesday, it was so nice out that we decided to go fly a kite. I thought it would be fun if we bought Rem a Thomas kite. We ended up going to the local high school so we had plenty of room to run around. Once the kite was up, Rem maybe watched it for a minute then ran over to the tennis courts to play w/ the balls. So Nate flew a kite & I watched Rem bounce balls across the tennis court...lol!
